I really wanted to like this recipe because I love cauliflower. But it is a flawed recipe. First, I would not boil the cauliflower. The texture and the added moisture made the whole thing mushy - even though I under boiled them. Keep them raw, the crunch is wonderful! Second, I personally would omit the cucumber. Again, it added too much moisture. If you really want to add them, I would remove the seeds first. I didn’t have any sour cream so I used Greek yogurt and the dressing was great. I will definitely make this again with those adjustments. And I may add some crumbled bacon to it as well.
